Maceration with the skins in steel tanks at a controlled temperature for 6 days, then drawing off and the alcoholic fermentation in stainless steel vats (approximately 20 days) where, maintaining the controlled temperature, the malolactic fermentation also takes place. Subsequently the wine undergoes a short passage in small used oak barrels. After being decanted in stainless steel, the wine can be bottled without filtration or clarification.

"The Mauro Veglio 2019 Langhe Nebbiolo Angelo pours from the bottle with a luminous garnet color with bright ruby highlights. The bouquet is fruity and lifted with notes of wild cherry and rose, but you also sense crushed limestone and dusty ash. This is a lean and compact wine that offers a long and polished close and some bright and lifted intensity overall. While a little unorthodox, you might even try this Nebbiolo with some crudité and the classic Piemontese garlic dip called bagna cauda. Some 20,000 bottles were made, (RP, 91 points)".
