The Lamys are a family of winegrowers that have been in Saint-Aubin since 1640. In 1973 Hubert Lamy created the estate, which at the time, was 7 ha. A new winery was built in 1980 and the it was further enlarged in 2002. Olivier, his son, joined Herbert in 1998. The estate now operates 18.5 ha of which 10.8 ha are located in 1er Crus in the communes of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay.
Manual harvesting with gentle pressing by a pneumatic press. No settling. Chaptalization if need be. Fermentation in casks (300 L) and Demi muits (600l). Temperature control in barrels. Very long fermentation: 90 days. MLF in casks. Wine moved using compressed air. Light filtration. Bottling (by gravity) after 17 months.
