Thierry took over from his father approximately 15 years ago back when most of the production was sold to négociants. Today the full production is sold as domaine bottling. This is an old family domaine with the family having over 500 years of history with the vines in Volnay.

This Volnay Village is an assembly of several plots including two Premier Cru sites that make up 25% of the total 1.5ha area: Volnay 1er Cru "Lurets" and Volnay 1er Cru "L’Ormeaux". The other plots are from lieux-dits Lurets, Grands Poisets and Buttes. As the various plots are all located at the bottom of the Volnay hillside, they are able to achieve a fine and well-balanced wine. Hand-harvested into small crates, yields are around 30 hL/ha. Fermentation takes place naturally in gravity-fed vats with indigenous yeasts and about a 12-day maceration time. Aging takes place in oak barrels, a maximum of 20% new, for 12 to 16 months depending on the vintage. After one racking without pumping, bottling is done without fining or filtration.
