I’ve always been a massive fan of Defaix wine since my early days at the Tribeca Grill. It’s an expressive and seductive Burgundy that never let me down regardless of vintage. The 2017 Clos du Chapitre is a well-balanced pure red fruited wine which captures the spirit of '17. It offers crushed raspberry, wild strawberry, a touch of fresh mint and rocky minerality with focused acidity. It’s light and lively with an attractive clean-cut finish. Delicious! - Daniel
This elegant Burgundy has wonderful aromatic clarity, a delicate red fragrance leavened with abundant floral suggestions. It is also wonderfully rooted in place, a classic expression of Rully in its characteristically soft, fragrant way. At this price point, one rightly expects deliciousness; this wine surprises in that it is also genuinely interesting, a wine to build a meal around. I’d opt for roasted cod with mushrooms and a simple red wine sauce. - Jason
This wine is excellent proof that you can ethereal and highly accomplished wines at incredible value in the Côte Chalonnaise. Hélène Jaeger-Defaix and her husband Didier Defaix are admirably capable in managing domaines at opposite ends of Burgundy, one located in Milly in Chablis and the other here in Rully. The core of their holdings come from Hélène’s side of the family and they are blessed with one of the greatest terroirs in Rully, the 1er Cru ‘Clos du Chapitre.'
The wine is transparent and energetic, pouring very pale ruby in the glass. Made in an elegant, light and floral style, there's an attractive mix of bright red cherry and cranberry on the nose along with earth and cloves. The palate has more body than you'd expect and fine backward tannins. A wine equally happy with food as on its own, it is another excellent reminder that the dramatic landscape of Rully is capable of yielding fine Red Burgundy at excellent value.
