This village cuvée features fruit from the 7 parcels that Joseph farms, hence the Sept Terroirs. Meant to be a perfect snapshot of the village and vintage, Sept Terroirs is fermented and aged in neutral 500 liter barrels. 2021 was a challenging and very small vintage, but the quality is off the charts. With verve and structure that hasn't been seen since 2014, this is a delicious rendition full of citrus blossoms, orchard fruit, quince, juniper and green peppercorn. Serve at 50 degrees in a Burgundy stem with roast chicken or grilled fish. Drinking window from now until 2028.
