Emmanuel harvests the white grapes early to avoid botrytis and likes a good quantity of green grapes to promote minerality and tension in his wines. All the whites are whole-bunch pressed - Chenin in Anjou Noir has a strong phenolic character and Emmanuel thinks it is important to avoid maceration as much as possible. Low additions of sulphur are used – just 1g at the press with average total sulphur on the whites around 40 mg/l.
A gorgeously expressive nose of sweet marmalade, honeysuckle and caramelised fruit. Abundant ripe fruit on the palate concentrated with rich honeyed flavours coupled with an underlying vibrant and welcome acidity. This wine made from 100% botrytised Chenin Blanc, is fresh but not cloying. A superb dessert wine and a wonderful partner to foie gras and blue cheese.
