The 1999 Taupenot-Merme Morey-St.-Denis 1er Cru 'La Riotte' is crafted from 100% de-stemmed grapes, fermented with indigenous yeasts in stainless steel tanks for 8–13 days. Extraction is carefully managed through punchdowns and pumpovers based on tasting. The wine ages for 12–15 months in lightly toasted barrels, with up to 30% new oak, then rests in tank for 3 months before bottling. It is bottled unfined and rarely filtered, preserving purity and expression.
