Few domaines illustrate Burgundy’s fullness more than these. By ‘fullness’ I mean the uncanny sense that even after our deepest and most attentive engagement with a particular wine something nevertheless remains undiscovered or ‘left over.’ Other wines too have their mysteries and their depths, but these tend to reveal and resolve themselves fully with careful drinking. Burgundy, in particular its top handful of domaines, seems different to such an extent that this difference pragmatically becomes a difference in kind. This describes Rousseau at its expressive best: beneath every deep, a deeper depth opens.
