The winery is now run since 2017 by youthful winemaker Carsten Saalwächter who is being described as one of the most exciting German winemakers to shake up the natural wine scene, making elegant and gastronomic, precise wines that are getting Somms very excited in the best restaurants!
Saalwächter has plots in both Ingelheim as well as the very steep, slate driven slopes of Assmannshäuser Höllenberg which he describes as real Grand Cru plots. With experience in Burgundy as well as a love for Pinot Noir and Chardonnay, Casten Saalwächter is really showcasing a Burgundian style to his wines that is pushing low-intervention German wine to new heights.
