40% destemmed, 60% whole cluster. 2 week fermentation in stainless steel, remontage for one week followed by light pigeage 1x per day for the other week. The idea is to achieve elegant tannins and not too much extraction. Aged in 50% 600L neutral demi-muids, 50% Flextank.
