Love finding mature Pavillon though prices tend to sting these days. We have to look twice as hard for half as much wine but searching remains plenty rewarding. Daniel and I snag a couple bottles for ourselves when good vintages are available, always the truest test of admiration.
About 10 years ago I remember hosting a massive '95/’96 Bordeaux retrospective at Tribeca Grill. Nearly all the classed growths and many of their second wines were opened and I distinctly remember Pavillon out-pleasuring the Château Margaux grand vin. The distinction was not one of inherent superiority but rather pleasure-in-drinking. While the Château Margaux finished with a thick slicking of ’95 tannins the Pavillon finished supple and gracious.
Most ‘95s crash landed that night but Pavillon landed softly, a neat trick.
