Jérôme Galeyrand farms 5 hectares in the Côte de Nuits, with his winery in Gevrey-Chambertin. Viticulture is organic for 70% of the vineyards and sustainable for 30%, with no pesticides. 'Poirossot' is 100% Aligoté from a granite-rich plot called Le Cran in the Mâconnais. The wine is 100% de-stemmed and ages for 16 months in barrel (20% new).
