Grapes are pressed gently and vinified slowly, avoiding malolactic fermentation where possible to maintain freshness and identity. With the use of mostly oak barrels (70%)—and the goal of implementing 100% oak in the near future—Nicolas further assists the wines to develop their aromatics while promoting complexity. Whereas his colleagues might age their wines for 6 months before secondary fermentation in-bottle, Nicolas prefers a long maturation period of almost 12 months—a significant point of difference that encourages his cuvées to improve their flavour profile and integrate more thoroughly before the effervescence is created.
