The Côte aux Prêtres appellation, or "priests' hill", reflects the vineyard's proximity to the pilgrimage route from Vézelay to Santiago de Compostela. This unique vineyard is located on a hill whose dome shape exposes it to both sunlight and wind. The soil is rich in small Kimmeridgian limestones. After the manual harvest, the grapes were delicately pressed and subjected to a long natural fermentation. The Côte aux Prêtres matured in vats and large wooden barrels, while remaining on its fine lees. The finished Chablis was bottled without filtration or clarification, with only a small addition of sulfur.
