Chalk close to the surface, very little topsoil
VITICULTURE
Organically farmed, all work in tandem with Mother Nature's rhythms.
VINIFICATION
Natural fermentation in 3-6 year old barrels. Light lees stirring; no malolactic fermentation.
AGING
Bottling in April-May, like other wines. 30 months on lees in bottles. Minimum 9 months after disgorgment before commercial release.
