Jean-Jacques Girard owns 18 hectares of vineyard in the heart of the Côte d'Or in the heart of Burgundy. Since 1977, together with his wife and son, he has managed the family estate, which is more than five centuries old. In the valley of Savigny-les-Beaune at the foot of the premier cru vineyards, Girard has planted pinot noir which is used for its red municipal appellation wine. The fully destemmed harvest ferments in traditional open vats where the skins and seeds (marc) are regularly submerged (pigeage). The aging takes place for 15 months in oak barrels of which about 10% is new. The result is a spicy, full-bodied red wine with length and substance.
