Regular price $604.95Founded in 1880, Domaine Joseph Drouhin has evolved and grown over the years to become one of the largest and most diverse estates in Burgundy. Their holdings include 73 hectares (around 183 acres) of vines across 90 appellations, including Chablis, Beaune, Gevrey Chambertin, Chassagne Montrachet and Beaujolais. A vast majority of Domaine Joseph Drouhin’s vineyards are Premier Cru and Grand Cru with some of their most prestigious plots being in Chambertin, Clos de la Roche and Echezeaux. Their plantings consist mainly of the two dominant Burgundian grape varietals, Pinot Noir and Chardonnay. Known for their philosophy of respect for terroir, the House of Joseph Drouhin practices organic and biodynamic viticulture techniques using horse drawn plowing, natural composting and allowing grass to grow freely between the vines. Domaine Joseph Drouhin strives for the highest levels of quality and authenticity which can be reflected in the character of their wines.
Following a manual harvest, the fruit is sorted twice. Maceration takes 2 to 3 weeks using indigenous yeasts only. The cap is punched down once per day until half the fermentation is finished, while the wine is pumped over once per day until the end of the fermentation process. This Burgundy red wine is matured in French oak barrels, of which 20% are new for a period of 14 to 18 months.
