Made by former professional soccer player Frederic Savart, 'l'Ouverture' is blanc de noirs from 100% Pinot Noir grown in the village of Écueil. It is a blend of wines from three successive vintages, half of which were fermented in mostly neutral oak with the other half in stainless steel. Dosage is 7g/L.
