Regular price $84.95Legal papers show that Boutillez Family was already present in this Village 5 centuries ago… For generations the Boutiilez family has been producing Champagne in Villers-Marmery. Marc Boutillez is now head of family domain Boutillez-Guer; more and more daughter Manon is stepping out of his shadow. Trained as a nurse, she decided to continue the family profession in 2019. With success, in 2021, at the 10th edition of the young talent competition Les Jeunes Talents du Champagne, Manon Boutillez became the winner in the chardonnay category. Under her own name, Manon Boutillez launched a series of promising champagnes with distinctive colorful labels.
Located in the Montagne de Reims which is known for its Pinot Noir, but the 1er cru village of Villers-Marmery planted with over 95% Chardonnay vines. These particular Chardonnays are the result of a major clay-limestone soil and a global East/South-East orientation, creating Champagne with mineral and citrus fruit aromas.
But within this small village, there are many other different plot identities: for instance, there is a plot planted on a red soil, which creates more “structured” mineral wines. Other differences come from the sun orientation of their plots: she feels like the east-west exposed ones have stronger and more powerful aromas. The combination of all these features make each plot unique.
From 2 vineyards in Villers-Marmery :50% Les Allouettes planted in 1972 & 50% Les Bleigniers planted in 1980. From the harvest of 2020, disgorgement June 2023, aged for 3 years, Extra Brut, dosage 4g/L
