Regular price $49.95Stéphane Saillet's adventure began in 2020 in Vertus (Marne) with the desire to create wines from elsewhere by harvesting grape varieties of various origins on their favorite terroirs. Although based in Champagne, Stéphane produces wines under the Vin de France appellation. He will glean grapes in Alsace, Beaujolais and Burgundy. Before that, Stéphane trained as an oenologist (with stints at Viret and Zind-Humbrecht among others) and worked as a cellar manager in Burgundy. Each vintage is thus produced from grapes from estates with which Stéphane Saillet works hand in hand. Some are renewed from year to year, others not. Each vintage benefits from the same attention and the entire range highlights the specificity of a vintage and the richness of the diversity of terroirs. Each year, the technical choices (barrels, maceration or aging time, destemming, etc.) are rethought with this philosophy. Cultivation practices that respect living organisms, spontaneous fermentations without sulphites in oak or glass containers as well as the absence of filtration allow Stéphane Saillet to obtain natural, fresh and digestible wines.
This Pinot Noir from the plots in the heart of Ladoix seduces with its elegance and finesse. The floral nose blossoms with aromas of plums and an evanescent delicacy. The mouth, fluid and precise, is crossed by a beautiful tension. To be enjoyed now for its delicacy or to keep for a few years to appreciate its evolution.
