Whole bunch maceration in stainless steel vats for 4 to 5 days. Alcoholic fermentation in vat for 15 days, aging in old wood barrel for 15 to 18 months. This is a great introduction to Fanny Sabre's reds. Fresh, fruit-driven, subtle tannins which gives a gentle grip and a wonderful minerality. As Fanny says, “we really believe in creating quality entry-level wines, we make a Bourgogne Rouge like a Pommard.” Match it with: Roast chicken roast or beef.
