Bernard Zito is an under the radar guru of organic and biodynamic farming in Burgundy. Among his many credits including overseeing the transition to biodynamic farming at such estates as Arnoux-Lachaux and Comte Liger-Belair.
Coming from multiple plots throughout Saint-Romain, average age of the vines are between 30 & 40 years of age. Vinifed in stainless steel before spending 6 months settling in bottle. Bernard’s Aligote’s show off the umami, saline, side of Aligote. Balancing the refreshing acidity and secondary notes with crunchy yellow and green fruit.
