Chanterêves is a husband and wife team launched in 2010 by two oenologists, Tomoko Kuriyama and Guillaume Bott. Tomoko's professional career began in Germany, working under Paul Fürst, Peter Jakob Kühn, and Hermann Schmoranz of Weingut Georg Breuer. Guillaume's first job was as the right hand of Gérard Boudot of Domaine Etienne Sauzet and Domaine Simon Bize-Leroy et Fils in burgundy, where he continues to work as the cellar master. The couple buys small quantities of organic grapes from various vineyards in Burgundy, employing a high percentage of whole cluster fermentation and a very low dose of SO₂. Aged 1 year in old oak barrels, no fining, light filtration.
