Winemaker Pierre Amillet works exclusively with Chardonnay, and his family has been farming some of the best vineyards in the Côte des Blancs since the late 1800s. 'Les Grands Blancs' is a their nonvintage blanc de blancs sourced from parcels in Mesnil and Oger. The wine was raised in a combination of neutral oak and stainless steel. The dosage is 5 grams per liter.
